This is an introductory course to human nutrition. The basic principles of human physiological processes are reviewed as far as they relate to nutrition. This includes an overview of carbohydrate, lipid and protein metabolism. The water and fat-soluble vitamins and their role in metabolism are examined. The mechanisms and nutritional aspects of water, electrolyte and mineral balances are covered. Integration of these basic concepts are applied in the study of energy balance, weight control and its relation to physical exercise. Special topics include alcohol, food additives, eating disorders, pregnancy and breast feeding, nutrition for infancy and adolescence, food preservation and safety.

Successful completion of the Nutritional Sciences (Dietetics) Program leads to a B.S in Nutritional Sciences. This course is designed to enhance the student’s knowledge and appreciation of the importance of nutrition to our health and well-being. It will introduce the student to the connection between nutrition, deficiencies and illness. Topics will include: Canada’s Food Guide, portion control, food labels, glycemic index, digestion, holistic nutrition and sports nutrition. The student will learn how to complete a personal nutrition assessment using nutrition software that will analyze: total calories, percentage intake of macronutrients (carbohydrate, fat and protein), fiber, cholesterol, vitamins, minerals, etc. The student will also learn about different body composition techniques and how to reduce body fat and increase lean muscle tissue in a safe and effective manner. The student will also participate in a class debate about controversial topics such as ergogenic aids and sports supplements.

Classes are offered in the evening, and some courses are offered exclusively online.

In addition to completing nutrition and health promotion courses, the master&,#146,s program includes a research project requirement. Sports Nutrition (Certificate)

The goal of the Certificate in Sports Nutrition (C.S.N.) program is to prepare nutrition and fitness professionals who demonstrate aquisition,comprehension and application of nutrition and fitness knowledge. Seventy percent or of students or greater will show proficiency in nutrition and fitness knowledge as evidenced by grades of B or higher in all C.S.N. courses.

The Certificate in Sports Nutrition prepares students for the American College of Sports Medicine Health/Fitness Instructors Exam. This flexible online program may be completed in one to two years - at your convenience from home or office. A combination of nutrition and exercise knowledge allows students to build competence in the area of personal training and fitness. The curriculum includes four classes, two of which are required courses in our master&,#146,s program (another course in the Certificate in Sports Nutrition curriculum can be used as an elective toward the master&,#146,s degree).
